DIY can be applied to almost anything. I enjoy crafts (crochet, knitting and embroidery) and cooking very much. Preparing my own food is very rewarding, especially when it tastes better than the products bought at the store!
I usually prepare a large bowl of home made egg salad for Easter, but it is very enjoyable all year through though. This egg salad is one of my sons favourite sandwich spreads and he likes it more ♥ than any store bought egg salad. So how could I refuse, when he asked me to prepare another bowl (again) this week 🙂
It got finished quite quickly….actually before I was able to make some nice pictures of this dish. Oh well, I’ll add some nice pictures when I prepare another bowl…and something tells me it probably will not take too long before I’ll get a new request. 🙂
Ingredients:
5 boiled eggs (8min)
2 (very) big tablespoons of home made mayonnaise
1 small pickle, finely chopped
two table spoons of finely chopped chives
1 tea spoon of paprika powder
a pinch of chili powder
pepper and salt to taste
First take 5 hard boiled eggs, remove the egg-shells. Put them in a bowl and mash them with a big fork, until the egg particles are as small as you like them. I like my egg pieces relatively small.
Then add all other ingredients: two very big tablespoons of home made mayonnaise, one small finely chopped pickle, two table spoons of finely chopped chives, 1 tea spoon of paprika powder, a pinch of chili powder and pepper and salt to taste. Stir everything well with a spoon, until it starts to appear like an emulsion with small egg particles in it. Taste it to see if it needs more salt or pepper…then add some if you like. Transfer it to a well closing storage container.
This is a lovely spread for bread, toast or to upgrade a green salad.
